bon appetit had a whole section devoted to dishes with a fried egg on top for january. i made the fried egg carbonara last night, and i think it’s safe to say that many things are made better with a fried egg on top. almost as many as bacon.

After seeing Morris Maven’s link to Provencal Fried Egg Soup I started thinking about other fried egg dishes. So here’s a comprehensive list:

1. fried egg sandwich
2. fried egg burger
3. fried egg salad
4. fried egg soup (above)
5. fried egg pasta (here and here)
6. fried egg on vegetables
7. fried egg on enchiladas (called enchiladas montadas or stacked enchiladas)

Of course, there’s no end to the things you can do with a fried egg.
