bon appetit had a whole section devoted to dishes with a fried egg on top for january. i made the fried egg carbonara last night, and i think it’s safe to say that many things are made better with a fried egg on top. almost as many as bacon.
After seeing Morris Maven’s link to Provencal Fried Egg Soup I started thinking about other fried egg dishes. So here’s a
comprehensivelist:
- fried egg sandwich
- fried egg burger
- fried egg salad
- fried egg soup (above)
- fried egg pasta (here and here)
- fried egg on vegetables
- fried egg on enchiladas (called enchiladas montadas or stacked enchiladas)
Of course, there’s no end to the things you can do with a fried egg.
